 Monastery Florentine Soup  

It is good for what ails you 

½ cup olive oil

1 bay leaf

I large onion

1 teaspoon thyme

7 medium tomatoes – peeled and chopped (substitute 2 large cans)

I bunch spinach, chopped or 1 package frozen spinach

2 garlic cloves

6 cups water

1 celery stalk thinly sliced

2 bullion cubes

2 carrots thinly sliced

Salt and pepper to taste

2 tablespoons fresh basil – chopped

Parmesan or Romano Cheese grated

Heat the oil and the onions then add tomatoes, sauté them slightly for 3-4 minutes.  Add the garlic cloves, celery, carrots, basel, bay leaf and thyme. Stir well and continue sautéing for another 2 minutes.  

Add the bullion cubes and water (for best results chicken stock can be substituted for the bullion and water combination using one can of stock or up to four cups of stock.) Bring the soup to a boil and let simmer – covered for 50-60 minutes.  Remove bay leaf. 

Add the spinach, salt and pepper to taste and cook additional 10 minutes.  Turn off heat let soup stand for 5 minutes.  Serve hot and sprinkle cheese on top.  

This is an elegant light soup. 

If you want to make this a comfort food dish – add more tomatoes – one large can and two carrots will usually be enough.  

To make this an Italian soup – take 3-4 cups of the base soup and add one cup of your favorite small pasta like shells or bow tie.   

To make this into a minestrone add one can red beans to the basic 3-4 cup tomato soup and add shell pasta.    

Over the past 15 years I have provided this soup to a number of people who have been undergoing chemotherapy treatments.  They say that it is a very comfortable meal and they can take small frozen portions and then warm them as they are able to eat. 

To make this as the BEST Medicine Soup every make the following changes – so you can make enough to last many days not one or two meals: 

Replace the 7 tomatoes with a large 102 oz can of tomatoes (found at Sam’s or Costco), use 5 cups of chicken stock and add water as desired. This is 4 times as much tomato, so increase your vegetables and spices accordingly.
